Date Pinwheels - from Barbara Palmer

Filling Ingredients & procedure:
- one package (7-1/4 oz) pitted dates
- 1/4 cup sugar
- dash salt
- 1/3 cup water
- one cup chopped nuts (walnuts or pecans)

Cut dates into small pieces. Bring to boil with sugar, salt and water. Simmer 5 minutes, stirring often. Add chopped nuts and cool.

Cookie Ingredients and procedure:
- 1/2 cup soft butter
- 1/2 cup light brown sugar packed
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla
- 1 egg
- 2 cups sifted flour
- 1/8 teaspoon salt
- 1/4 teaspoon baking soda

Mix flour, salt and baking soda together.
Cream butter; add sugars, vanilla, and egg.
Mix into dry ingredients, beat until light.
Chill until firm enough to roll.
Halve dough; roll each half on floured waxed paper into a 12x9 inch rectangle. Spread with filling (above, prepared earlier).
Roll up tightly from end.
Wrap in paper.
Chill over night. Freeze for easier slicing.
Slice 1/8" thick.
Bake on lightly greased cookie sheet in moderate oven (375ºF) for about 10 minutes.
Store in airtight container.
